The roasted buckwheat is generally richer in dietary fibers and carbohydrates. They are also an essential source of several necessary minerals. One cup of cooked buckwheat provides 117 mg of phosphorus, 0.25 mg of copper, 85 mg of magnesium and 0.68 mg of manganese.
